Power Up Kale Salad


Kale Salad
  • 4 cups of thinly sliced kale
  • 2-3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 cut tart apple (fuji or Macintosh)
  • ¼ cup dried cranberries
  • ½ cup mixed nuts (optional)


1.) Massage kale with lemon juice and olive oil until kale appears bright green (about 1-2 minutes).
2.) Add nuts, apples, and cranberries.
3.) Adjust taste as needed by adding lemon and olive oil.
4.) Let sit for 10 minutes before serving.
