- 5 strips of crumbled bacon
- 1-2 large heads of broccoli
- 1/2 of a red onion (optional)
- 1/2 cup of sunflower seeds
- 1 cup of shredded cheddar cheese
- For the dressing:
- 3/4 cup of mayo
- 1/4 cup of sour cream or plain greek yogurt (trust me… they’re identical!)
- 1 1/2 tablespoons of white wine vinegar
- 3 tablespoons of sugar
- dash of salt
- dash of pepper
Directions
- Start by making the dressing. Combine mayo, sour cream (or yogurt), vinegar, sugar, salt, and pepper in a medium bowl.
- Whisk dressing until all lumps disappear. Set bowl aside.
- Cook bacon in pan, oven, or microwave until desired crispness. Allow to cool, then crumble into small pieces with hands.
- While bacon is cooling, clean and cut broccoli into bite size pieces and place into a large bowl.
- Dice and add red onion to bowl if desired.
- Add cooled bacon, sunflower seeds, and cheese to bowl.
- Mix together with hands or a spoon.
- Pour dressing over salad ingredients and mix until coated.
- Serve immediately or chill for later use.
